Tiramisu (6 servings)
Ingredients:
2 egg whites
4 egg yolks
150g powdered sugar
400g Mascarpone cheese
2 packs of Sponge Fingers 200g
175ml strong cold black coffee
200g grated dark chocolate
Cocoa powder
Method:
Beat the egg whites until stiff.
Whisk together the egg yolks and sugar until the mixture is thick and pale.
Gently add the Mascarpone cheese and the egg whites.
Line the base of a deep serving dish with a single layer of Sponge Fingers.
Sprinkle the Sponge Fingers with a part of the coffee.
Spread a layer of the Mascarpone mixture on top of the Sponge Fingers.
Cover the Mascarpone mixture with a part of the grated chocolate.
Repeat this making several layers and end with the Mascarpone mixture.
Dust the cocoa powder on top.
Refrigerate overnight.
